How to Choose the Right Extraction Canopy Size for Your Commercial Kitchen

Choosing the right size extraction canopy is one of the most common questions we get from commercial kitchen operators. Get it wrong and you either overspend on an oversized unit or end up with a canopy that can't clear smoke and grease properly. Here's a straightforward guide to help you pick the right size.

Match the Canopy to Your Cooking Line, Not the Room

The canopy should extend beyond the cooking equipment on both sides, not just cover the room above it. As a general rule, the canopy should overhang the cooking appliances by at least 150mm on each open side. If your cooking line is 1.8m wide, you generally want a canopy in the 2m to 2.5m range once you allow for the overhang.

Don't Forget the Fan

A canopy is only half the system. It needs to be paired with a fan sized correctly for the airflow (m3/h) your kitchen requires. Baffle Filters Are Included, But Check Replacement Needs

All our canopies come with baffle filters as standard. If you're running a high-grease environment such as a charcoal grill or fryer line, it's worth keeping spare baffle filters on hand, as these need regular cleaning and periodic replacement.
