A stainless steel or aluminium canopy can appear to be a straightforward material choice. In a working kitchen, factory or workshop, however, it affects hygiene standards, fire performance, installation method, service life and the long-term cost of the extraction system. The right answer depends on what is being extracted, where the canopy is fitted and how hard the site works.

For most commercial kitchen extraction projects, stainless steel is the practical first choice. It is built for heat, grease, frequent cleaning and demanding day-to-day use. Aluminium has worthwhile strengths, particularly where low weight matters, but it is not automatically the lower-cost or better-value option once the full operating environment is considered.

Stainless steel or aluminium canopy: the main difference

The core difference is not simply appearance. Stainless steel provides a hard-wearing, non-porous surface that is well suited to areas exposed to grease-laden vapour, steam, heat and cleaning chemicals. Aluminium is significantly lighter and naturally resistant to corrosion, but its softer surface is more easily marked, dented or damaged under heavy use.

A canopy is part of a wider extraction system, not just a metal enclosure above equipment. It must capture contaminated air effectively, support suitable filters, connect correctly to ductwork and remain safe and accessible for maintenance. Material selection needs to support each of those requirements.

Stainless steel is commonly specified for commercial cooking lines because it holds its shape well, tolerates regular cleaning and gives a professional, hygienic finish. Grade 304 stainless steel is a dependable choice for many indoor commercial applications. Where there is a more aggressive environment, such as coastal exposure or higher chloride levels, grade 316 may be considered for improved corrosion resistance.

Aluminium can be useful for lighter-duty ventilation arrangements, specialist installations and situations where roof loading, lifting access or supporting structure presents a constraint. It is not a poor material. It simply needs to be matched to the job rather than selected solely because it weighs less.

Hygiene and cleaning performance

Commercial extraction canopies need to be cleaned properly and regularly. Grease deposits reduce airflow, create a fire risk and make a kitchen harder to maintain. Smooth stainless steel surfaces are easy to wipe down and stand up well to the repeated cleaning routines expected in food service environments.

Stainless steel also maintains a clean, consistent finish over time when suitable cleaning products are used. It does not need painted coatings that can chip or wear away. Welded joints, folded edges and filter housings can be fabricated accurately, helping remove unnecessary dirt traps and making the finished canopy easier to inspect.

Aluminium has a naturally protective oxide layer, but it is more vulnerable to scratching and abrasion. Strong alkaline products can discolour or attack aluminium surfaces if cleaning is not carefully controlled. In a busy kitchen where staff need straightforward procedures and fast turnaround, that extra sensitivity can become an avoidable maintenance issue.

For factories and workshops, the decision should reflect the contaminants involved. Fine dry dust, warm air or general fumes may not place the same demands on the metal as cooking vapour. Where wash-down cleaning, oils, moisture or process residues are involved, stainless steel usually provides the more dependable surface.

Heat, grease and fire considerations

Where a canopy sits above commercial cooking equipment, material performance is directly tied to safety. The canopy must cope with continuous heat, grease-laden air and the possibility of flare-ups. Stainless steel performs reliably in this environment and is the established material for professionally fabricated kitchen extraction canopies.

The material alone does not make a system compliant or safe. Correct canopy sizing, capture and containment, baffle filter selection, duct design, access panels, fan duty and a planned cleaning regime all matter. A premium-quality canopy fitted to poorly designed ductwork will not deliver the airflow or fire protection the site requires.

Aluminium has a lower melting point than stainless steel and loses strength more quickly at elevated temperatures. That does not rule it out for every extraction application, but it makes it less suitable around high-heat cooking processes. For restaurants, takeaways, catering operations and commercial production kitchens, stainless steel is normally the sounder engineering decision.

Weight, handling and installation

Aluminium's biggest advantage is weight. A large aluminium canopy is easier to handle during transport and may reduce loads on existing supports. This can be valuable where access is restricted, where a canopy must be lifted to an awkward position, or where a lightweight structure has limited capacity.

That benefit should be considered alongside fabrication requirements. A canopy has to remain rigid, retain its shape, support filters and lighting where required, and connect cleanly to ductwork. Thin or inadequately braced material can flex, dent or develop an uneven finish. The apparent saving from a lighter material can disappear if additional reinforcement, specialist detailing or future repairs are needed.

Stainless steel is heavier, so installation planning matters. Proper suspension points, secure fixings and safe lifting procedures are essential. Yet its stiffness and durability often make it the better long-term choice for permanent commercial installations. A fabricated canopy designed around the site's dimensions can also reduce fitting issues, particularly where walls are not square, ceiling heights vary or existing services create obstructions.

Cost: look beyond the purchase price

Aluminium may appear less expensive for some standard components, while stainless steel can carry a higher initial material cost. Procurement should not stop at that comparison. The relevant figure is the installed and operating cost over the canopy's working life.

A stainless steel canopy can justify its price through long service life, resistance to hard cleaning, fewer cosmetic repairs and suitability for demanding food production environments. It also gives operators and inspectors confidence that the equipment has been specified for the conditions it faces.

Aluminium can offer good value where the duty is lighter, the atmosphere is suitable and weight is a decisive project factor. It may be a sensible option for selected general ventilation systems or purpose-designed applications. It is less compelling when the canopy will face high temperatures, daily grease exposure and intensive cleaning.

A low initial quote can also hide omissions. Check whether the price includes filters, grease collection channels, lighting cut-outs, spigots, welded corners, installation fixings, access provision and the support needed to connect the canopy to the complete extraction system. Comparing like for like prevents a cheap canopy becoming an expensive site variation.

Fabrication quality matters as much as material

Even the correct metal will underperform if the canopy is poorly made. Accurate folds, clean welding, properly formed grease channels and correctly positioned spigots all affect extraction performance, cleaning and installation. The canopy needs sufficient overhang and capture area for the appliances beneath it, rather than being selected from a standard size without checking the cooking line.

For bespoke projects, start with the equipment layout and the extraction route. Identify the heat source, appliance duty, available ceiling height, duct path, fan location and cleaning access. This allows the canopy dimensions, material thickness, filter arrangement and connection points to be designed around the actual site.

Also consider who will maintain the system. A material that needs special cleaning care may be acceptable in a controlled industrial process, but less appropriate in a fast-moving catering operation with multiple staff users. For most high-use commercial extraction systems, stainless steel offers the best balance of hygiene, strength, heat tolerance and lasting value. Aluminium earns its place where weight reduction and suitable operating conditions genuinely outweigh its limitations. Specify the canopy around the process, not just the price, and the finished system will work harder for the business for years to come.
